De familie Saby boert al negen generaties lang in Saint-Émilion. Château Rozier, de historische bakermat van de familie, is goed voor 30 hectare verdeeld over 56 percelen in Saint-Émilion. In de loop der jaren is het familiebezit uitgebreid met onder andere Château Saint-André Corbin in Saint-Georges Saint-Émilion, Château Hauchat-La-Rose in Fronsac en Château Saby in Villegouge.
